Skinny in the Kitchen-Skinny Taco Chicken Chili

And the quest to eat delicious foods and keep seeing the number on the scale go down continues... 

This one definitely had to be shared as it instantly became a staple in this household. We've always been big on taco nights and this was no exception. It's no wonder we're currently (healthily) obsessed with this recipe-

**Like I mentioned in my last "Skinny in the Kitchen" post- 

Please note- I won't be reposting any recipes in their entirety on here. I'll just be sharing my own photos and my experience attempting them. These are not my own recipes and I'll always include the link back to the site it originally came from. I merely share my adventures so you all can hopefully be inspired and see that anyone can cook skinny!**

If you've ever used a crock pot, you know these recipes are the easiest! This one is no exception. I throw everything in before going to work and dinner is ready when we get home. Perfect! 


There are no plated pictures of this meal because... well... I always get too excited to eat it and never think to stop for a quick photo.  



You'd think even w/ there being so much leftovers and us eating it for the next few days, at some point I would get a picture. Nope. Not one.  

I think the only difference between how I prepare it and the recipe on the site is that I don't add corn kernels (because I like corn on the cob but kernels creep me out...) and now I've been using the no salt added tomato sauce. 

Now- when I serve myself this chili, I have: 

1 1/4 cups of chili

1/8 cup of shredded 2% sharp cheddar cheese

1 tbs fat free sour cream

About 6 Tostitos multi-grain scoops, crushed

All of that, which trust me is a hearty serving that leaves me full for hours, comes out to a whopping 325 calories.  

Delicious and calorie conscious! 

Actually, now I'm really craving a bowl of this stuff... That is the one down side. Any time you crave a crock pot recipe, you have to wait 8 hours. 8 hours is far too long for taco deliciousness.  

Ok, now it's your turn- go try it out! I'm telling you, eating skinny does not get much easier than this. So why not start w/ something you pretty much don't even have to cook yourself! The little gnomes in the crock pot do all the work for you.
